So I followed my own advice and tried something new.
It took a while to make, only because I’ve never made it before. But overall… a fabulous dish. Here are the juicy details:
1. Sautee some onion and garlic in a little oil (I also added lemon juice). Add a ton of spinach and cook just a little longer. Then I added a splash of Apple Cider Vinegar (My new favorite kitchen staple!) Set aside
2. Use almond flour (i don’t know… 1/4 cup?), Tsp of: garlic powder, onion powder, oregano, and a little salt and pepper). Put it all in a bowl.
3. Take some chicken breast, and beat it until it’s thin (I measured out 4 oz portions). Dip Chicken in chicken broth (you could use egg whites), then coat with flour mixture.
4. Stuff the chicken with the slightly cooked spinach, roll it up, and put it in the oven at 375? for maybe 20 minutes. (obviously… check for done-ness)
Okay… you could be finished there, or you could make this super yummy tomoato-y sauce that I put together to go on top of the cooked chicken dish.
Sautee lemon juice, 1-2 Tbl onion, a little minced garlic, 3 Tbl tomato paste. Add a little Apple Cider Vinegar and as much Chicken Broth as you want depending on how “liquid-y” you like it. Then add a ton of Chopped up basil. I think my concoction got up to a boil (by accident), and then I let it simmer. Not sure if the boiling’s necessary.
This dish rocked! Dig in!
